OVERVIEW:
Located in the heart of Fort Collins, Ginger and Baker is a café, market, and Colorado steakhouse that all began with the idea of opening a pie bakery. Occupying the Northern Colorado Feeders Supply building, a landmark rich in history since the early 1900s, this complex has evolved from a grain store and community hub to a vibrant restaurant and favorite gathering place.
The building, recognized for housing one of the first elevators in the area, transitioned through various names and purposes before becoming the Ginger and Baker we know today, opened in 2017. Under the vision of its founders, it was developed into a comprehensive dining and gathering experience from the proposed simple pie shop, paying homage to its roots while catering to modern tastes.
Extensive renovations had been undertaken to preserve the building’s historical essence and integrate modern functionalities. Despite the extensive refurbishment, the outdoor patio area remained underutilized, mainly due to its exposure to the elements.
A louvered roof pergola installation was necessary to transform the space into a comfortable, versatile outdoor venue. The customer wanted a pergola with screens to create a three-season room with added seating and event space, enhancing the Ginger and Baker experience for the Fort Collins community and its visitors.

CHALLENGE:
The installation of a pergola at Ginger and Baker presented unique challenges due to the historical integrity and architectural constraints of the original Northern Colorado Feeders Supply building. The structure’s very old brick composition meant that the pergola could not be directly attached to the building; it had to be a freestanding structure on a raised patio. This necessitated the fabrication of special flashing to seamlessly connect the pergola to the building without leaving any gaps while also accommodating a crucial drain pipe from the roof.
Another consideration was the discovery that the patio area was filled with pea gravel rather than solid concrete, making it impossible to anchor the pergola’s footings traditionally. The solution involved the use of helical piers, essentially large corkscrews, which were drilled seven feet into the ground to find adequate subsoil for a stable foundation.
Additionally, the presence of a stairwell leading down to the basement event space required a thoughtful design that could not cover the stairwell but had to encompass it, leading to a complex structure with multiple angles. Fast-egress motorized screens that could roll up and down quickly were included in this commercial pergola.
SOLUTION
StruXure Denver installed the Pivot 6 pergola at Ginger and Baker, covering an area of 600 square feet in four sections. The Pivot 6 is recognized for its functionality, and our team of experts seamlessly integrated the pergola with the building’s historical aesthetics. The pergola was finished in black, complementing the old brick and modern additions of the Ginger and Baker complex.
This Pivot 6 pergola is equipped with louvered rain sensors that automatically adjust to weather changes, ensuring the outdoor space remains usable regardless of the weather. Each section features built-in lighting and fans, enhancing comfort for guests throughout the seasons. MagnaTrack motorized screens were incorporated on the sides further to transform the outdoor patio into a versatile three-season room. These screens serve multiple purposes: they provide protection from wind and cold, reduce sun exposure, and contribute to a more enclosed, room-like atmosphere while still offering the flexibility to enjoy the outdoor environment fully.
A key feature of the Pivot 6 pergola is its patented gutter system, which ensures that the covered area remains dry, enhancing the comfort and usability of the space. This system is crucial for areas like Fort Collins, where weather can be unpredictable, ensuring that events and gatherings can proceed without concern for sudden weather changes. Combining these sophisticated features with the pergola’s adjustable louvers creates a dynamic and adaptable outdoor space, perfectly aligning with Ginger and Baker’s vision of a modern yet historically respectful gathering place.
